School has barely started and Kaila is already asking to do everything on her own. She doesn’t even want me to walk her to her class anymore or come watch her play on the playground. What a difference a year can make! I couldn’t believe that she forgot to hug me on her first day. I think my mama heart broke a little, but I was also so proud of her. Do you ever have conflicting feelings like this? Did I tell you that the twins started preschool too? So many changes for our family this year. The twins are absolutely loving school. Arie did not cry at all on her first day and she basically sat down at the desk like she was a pro. Layla had a harder time with us leaving and she shed a few tears.

I have the house to myself for a few hours every Tuesday and Thursday now, so I recently decided that I needed to step out of my comfort zone a bit. It is no secret that my husband, Jhurell, is the head chef in our home. He has been cooking since he was little and I can honestly say that I feel like I live in my own personal restaurant. But lately, I have been taking steps to feel more confident in the kitchen. Now that I have a little bit of extra time, I use it to make sure my family has a delicious meal after their busy day.

This is why I am so grateful that I found the new McCormick® ONE Dish Seasoning Mixes . I especially love the Chicken Parmesan. Chicken parmesan was the very first meal that my husband cooked for me before we got married. It holds sentimental value and I was thrilled to be able to cook it on my own thanks to McCormick®.

I’ve actually loved McCormick® seasoning ever since my parents used them when I was a child. Did you know they have been making delicious flavors for 128 years? That is a really long time! You can serve delicious meals to your family with confidence and enjoy easy prep and clean up.

The directions for cooking are right on the back of the McCormick® Chicken Parmesan mix. Talk about convenient! The prep time is only 10 minutes, which is amazing for any mom, like me, who has very little time to get things done. You could prep the chicken the night before and then it would be ready to cook the next day.

Here are the items that you will need:

1 package of McCormick ONE seasoning mix

4 thinly sliced boneless chicken breasts

3 tbsp. oil, divided

4 cups of broccoli florets

½ cup of spaghetti or marinara sauce

½ cup of shredded mozzarella cheese

Salt and pepper to taste

Directions:

  1. Preheat the oven to 425°F .
  2. Empty seasoning mix into a shallow dish.
  3. Brush chicken with 1 tbsp. of the oil.
  4. Coat evenly on both sides with seasoning mix.
  5. Discard any mix that is not being used.
  6. Place chicken on large shallow foil-lined sheet pan sprayed with no stick cooking spray.
  7. Place broccoli in large bowl.
  8. Toss with remaining oil and salt and pepper to taste.
  9. Arrange broccoli on sheet pan around chicken.
  10. Bake 10 minutes or until chicken is cooked through.
  11. Remove from oven.
  12. Spoon sauce evenly over chicken.
  13. Sprinkle with cheese.
  14. Bake 5 minutes more or until cheese is melted.

Did I mention that the cook time is only 15 minutes? Not one hour…15 minutes! Talk about a life-saver for a busy mom like me. Having twin toddlers means that they require constant attention and supervision. This short period of baking time really benefits me. I do not have to worry at all about getting distracted by cooking because I just pop it into the oven and wait for the timer to go off. Easy enough right? McCormick® ONE Dish Seasoning Mixes are already changing my life for the better and I have only tried one flavor. The good news just keeps on coming because you can now find this seasoning mix at your local Walmart! You have to try this out for yourself, but trust me, the flavor definitely makes everyday meals SO much better! I cannot wait to try all the others. Thanks to McCormick® I have more time to spend with my family and spend less time in the kitchen. I call this a major mom win!

Until next time, XOXO, Meg
